Take the classic “Hanaemi Junmai,” for instance. It is a dry style with a Sake Meter Value (SMV) of +7 and an acidity of 1.8. While retaining the rich umami of the rice, the acidity tightens the overall flavor profile, preventing heaviness and creating a refreshingly crisp finish.

Hanaemi Junmai 80 Polished to an unconventional 80%. While most sake is heavily polished to remove impurities and achieve cleanliness, Hanaemi Junmai 80 deliberately leaves more of the rice unpolished. It delivers a sharp, dry profile backed by robust rice umami and pronounced acidity.

Hanaemi Tokubetsu Junmai Brewed with Yamadanishiki rice polished to 60%. Features a fresh aroma and a sharp, clean palate (SMV +5, acidity 1.9), perfect for seafood.

Hanaemi Junmai Ginjo Polished to 50% using Yamadanishiki. Retains the signature dry profile of Hanaemi while offering the gorgeous, aromatic qualities characteristic of a Junmai Ginjo.

The Meaning Behind the Name “Hanaemi”

The classic Junmai features Baby’s Breath (Kasumisou), symbolizing “innocence” and “a pure heart.” The Tokubetsu Junmai features a Dahlia, the Junmai Ginjo a Lily, and the Junmai 80 a Camellia. Ochi Shuzo, the brewery behind Hanaemi, is located in Saiki City, Oita Prefecture, and was founded in 1885 (Meiji 18). Today, the brewery is run by the Ikeda brothers, with Master Brewer (Toji) Tsukasa Ikeda leading production.
